As it feels like winter outside (while it is still October), it’s time to experiment in the kitchen. During the cold and dark evenings, I always feel the need to try out new things in the kitchen. This time I kept it easy. It was a long time ago I ate self made waffles, so I decided to search for a good recipe. I found an easy but delicious one of Jeroen Meus. So after work, I crossed to the super market and bought all the ingredients. That same evening, I made these delicious waffles. And I prefer them while they’re still a little warm :). And of course, I brought some waffles for my colleagues, who really enjoyed them.
Find the recipe here (for 2 persons):
- 250g pastry flour
- 200g butter
- 150g sugar (optional: 1/3 vanilla sugar)
- 3 eggs
- 1/4 teaspoon baking powder
- 1/2 tablespoon powdered vanilla pudding
- half vanilla pod
- 1 pinch of salt
Once you have all the ingredients, you can start cooking.
- Carefully weigh all the ingredients and start with the butter
- Melt the butter in a pan
- Take a blow and add the flour, sugar, baking powder and the pudding powder
- Cut the vanilla pod, scrape the vanilla seeds and add to the flour mixture
- Also add a pinch of salt
- Mix everything together
- Break the eggs one by one in the bowl until you obtain a smooth batter
- Add the melted butter and mix till you become the perfect waffle batter
- Transfer the batter into a bowl and put it in the refrigerator for at least an hour (the batter should stiffen)
